6 White tortilla, 1 cup mozzarella cheese, 1 cup shrimp, 1 cup mango salsa, 1/4 cup scallions, 1/4 cup red onions, and anchovies to taste.
- Toast the white corn tortilla until slightly crispy, about 10 -15 minutes at 375 degrees.
- Mince 1 mango in the blender to the consistency you enjoy. The mango salsa is the base. Spread the mango salsa over the toasted tortilla to taste. Place the rest of the ingredients over the blinizza as desired.
- Put the Blinizza in the oven until the cheese has melted or turns a golden brown.
This dish was so easy to make. How did I come up with this recipe? I challenged myself to find a recipe suited for 4 ingredients. So, I googled each ingredient to determine the best combinations that would yield great flavors. I found a great blini recipe by Wolfgang Puck and my passion for pizza inspired me to create the Blinizza .
