Black Bean Quinoa Salad
Hi, Angels Working On Earth Family!
There are so many different ways to make a quinoa salad. There are Asian, Southwestern, Vegan, and many more versions. Today, we want to show you the basics and let you decide where you want to take your creation.
We made a simple salad with food items we had on hand. Quinoa salads are the best go too because it isn’t complex. Your friends will think you slaved over a hot stove when all it took was slicing and dicing a few veggies, opening a can of beans, and steaming the quinoa.
You can add a few more proteins and this can be dinner. Or you can eat this on its own. Just make sure you get all your macros. I love to use fresh vegetables, but you can also use frozen too.
Sauces add an additional component or complexity! How about a nice avocado and cilantro sauce drizzled over this salad? Yummy!
Quinoa can be bland. If you season so that it is flavorsome, then you will really enjoy a quinoa salad!
Time to cook: 30
1 red pepper
1 green pepper
1 can black beans
1/2 Cup white onions optional
Parsley to garnish
Cilantro to garnish
Prepare quinoa according to directions on the box
Steam or sauté the red, onions and green peppers until tender and place in a bowl. The veggies can be raw if desired.
Rinse the black beans and add to the bowl
Let the quinoa cool down and stir until fluffy.
Combined the quinoa to the veggies and beans and stir until combined
Add you your favorite spices or citrus to create the flavor you like
Garnish with parsley or cilantro
